Mom's Custard Pie
Mom'S Custard Pie is an moderately easy dinner. Made with 4 eggs, 1/2 c. sugar, 1/4 c. salt, 1 tsp. vanilla and 2 1/2 c. milk, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.
Line unpricked pie shell with a double thickness of heavy-duty foil.
Bake at 450° for 8 minutes.
Remove from the oven and set aside.
In a mixing bowl, beat the eggs just until combined.
Blend in sugar, salt and vanilla.
Stir in milk. Carefully pour into crust.
Cover edges of pie with foil.
Bake at 350° for 25 minutes.
Remove foil; bake 15 to 20 minutes longer or until a knife inserted near the center comes out clean.
Cool on a wire rack.
Sprinkle with nutmeg.
Store in the refrigerator. Yield: 6 to 8 servings.
