Mom's Catsup(From Elizabeth Thomas)
Mom'S Catsup(From Elizabeth Thomas) is an moderately easy dinner. Made with lots of tomatoes (about 1/2 bushel), 2 onions, cut up, 2 green peppers, cut up, 1 tbsp. mixed pickling spice (omit bay leaves and hot peppers) and 1 to 2 c. sugar, this recipe delivers authentic, satisfying flavors. Cook the first 4 ingredients in heavy pot until it reduces to 1/2 in amount.
Add 1 to 2 cups sugar at a time and taste after each addition.
Make it as sweet as you like.
Add salt and taste. Add more, if needed.
Pack in hot jars and seal.
It is very close in taste to a chili sauce.
