Mock Hollandaise
Mock Hollandaise is an moderately easy dinner. Made with 1/2 c. butter or margarine, divided, 2 tbsp. flour, 3/4 c. evaporated milk, 3 egg yolks and 1 tbsp. lemon juice, this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.

Melt 2 tablespoons butter over low heat (or in top of a double boiler over hot water); stir in flour until smooth.
Add evaporated milk slowly, stirring constantly.
Cook until smooth. Add egg yolks, one at a time and stir well.
Add remaining butter, then lemon juice.
Stir until smooth and creamy.
Makes 1 1/2 cups.
May be reheated.
If too thick, add a tablespoon water or lemon juice.
