Mlawi
Mlawi is a Tunisian flaky semolina flatbread made by stretching oiled dough into thin layers, folding it into squares, and griddling until crisp outside and tender within.

Mix semolina, flour, salt, and warm water into a supple dough and knead until smooth.
Divide into balls, coat with olive oil, and rest until relaxed.
Stretch each ball very thin with oiled hands, then fold into a layered square.

Serve plain with harissa or split and fill with tuna, egg, potato, and olives.
