Microwave Tuna Wedges
Microwave Tuna Wedges is an moderately easy dinner. Made with 2 eggs, 6 green onions, finely chopped, 1 c. fine bread crumbs, 1 to 2 tomatoes, cut in wedges and 1 1/2 c. cooked rice, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.
In large glass bowl, beat eggs with a fork.
Add rice, onions and undrained tuna, mixing well.
Melt butter in microwave, about 1 minute on High.
Add to tuna along with thyme and crumbs, mixing well.
Evenly spread mixture in lightly greased 9-inch glass pie plate.
Cover with wax paper and microwave on High about 9 to 11 minutes, rotating dish halfway after 5 minutes.
Garnish with cheese and tomato wedges.
This is great on a hot summer when you have fresh garden tomatoes.
