In a 1 1/2-quart baking dish, combine sugar, peanuts, syrup and salt.

Microwave on High 6 to 9 minutes or until light brown, stirring well every 4 minutes.

Add butter and vanilla; stir well. Microwave on High 1 to 3 minutes or until mixture reaches the hard crack stage, 300Β°, when tested.

Peanuts will be light brown and syrup will be very hot.

Add baking soda and gently stir until light and foamy.

Pour onto lightly buttered cookie sheet.

Let cool 1/2 to 1 hour.

When cool, break into small pieces.

Store in airtight container.

Makes one pound.
