Mexican Stuffed Peppers
Mexican Stuffed Peppers is an impressive dinner. Made with 4 medium or large green peppers, 1/2 lb. ground turkey, cooked and drained, 1 small chopped onion, 1 tsp. crushed garlic and 1 c. cooked rice, this recipe delivers authentic, satisfying flavors. Perfect for family dinners and special occasions.

Remove stems and white membrane from peppers. Rinse and set aside.
Saute onion and garlic in a little water until tender. Add turkey, rice, raisins, brown sugar, vinegar, chili powder, cumin, cinnamon, coriander, salt and pepper.
Stir in Mozzarella.
Place peppers in casserole sprayed with Pam.
Stuff with filling.
Any leftover filling can be place around peppers.
Cover with Saran Wrap. Microwave on Medium until peppers are tender.
Remove wrap. Sprinkle with Cheddar cheese and cilantro. Place in a 350Β° oven until cheese melts.
