Mexican Rice Casserole
Mexican Rice Casserole is an moderately easy dinner. Made with 1/2 lb. mushrooms, 1/2 lb. ground beef, 1 c. raw rice, 1 medium chopped onion and 1 medium chopped pepper, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.
Clean and slice mushrooms and set aside.
Start to brown meat in a large skillet; add mushrooms, rice, onion and pepper. Continue browning until rice is lightly browned.
Stir in tomatoes, water and seasoning.
Turn into a 3-quart casserole and cover.
Bake at 350Β° for 50 to 60 minutes until rice is tender and liquid is absorbed.
Remove cover for last 10 minutes of baking time.
