Mexican Rice
Mexican Rice is an moderately easy dinner. Made with 1 c. long grain rice, 1/2 of an onion, 2 cloves of garlic, 1 chicken (or tomato with chicken) bouillon cube and celery salt, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.
In a frying pan with a little oil, just enough to cover the bottom of the pan, place rice.
Brown (actually more like "tan") the rice.
In a blender place the onion, cloves, bouillon cube, celery salt, seasoned salt, black pepper and can of tomato sauce. Blend until smooth.
Add to browned rice, then add enough water to cover rice.
Remember 1 cup rice to two cups liquids.
Bring to a boil, cover then simmer until all the liquid is evaporated.
Fluff with fork and serve.
