Mexican Chicken Stew
Mexican Chicken Stew is an moderately easy dinner. Made with 1 tbsp. olive oil, 1 lb. boneless, skinless chicken breast, cut into cubes, 1 c. chicken broth, 1 (4 oz.) can chopped green chilies and 1 1/2 tsp. california style blend garlic powder, this recipe delivers authentic, satisfying flavors. Heat oil in large skillet over medium-high heat.
Add chicken and cook 4 to 5 minutes, stirring often.
Remove chicken and set aside.
Add remaining ingredients except onion to skillet; mix well.
Bring to a boil; reduce heat to medium and cook 10 minutes. Stir in cooked chicken and onion; simmer 5 to 10 minutes.
If desired, serve with tortilla chips or corn bread.
