Meatless Chili
Meatless Chili is an moderately easy dinner. Made with 2 tbsp. oil, 1 1/4 c. chopped onion, 2 cloves garlic, minced, 2 tsp. chili powder and 1/4 tsp. each: dried basil leaves, oregano leaves and ground cumin, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.

In a 5-quart saucepot, heat oil over medium heat.
Add next 6 ingredients.
Cook, stirring 5 minutes, or until onion is tender. Add zucchini and carrots.
Cook, stirring for 1 to 2 minutes. Stir in remaining ingredients. Bring to a boil.
Reduce heat and simmer 30 to 35 minutes.
Makes 6 servings.
Freezes well.
