Maple Cream Pudding
Maple Cream Pudding is an moderately easy dinner. Made with 3/4 c. maple syrup, 2 tbsp. butter, 2 eggs, separated, 2 tbsp. cornstarch and 1/4 tsp. salt, this recipe delivers authentic, satisfying flavors. Simple to make and full of bold, satisfying flavors.

Bring maple syrup and butter to a boil and simmer 10 minutes; let cool.
Place egg yolks in top of double boiler and beat slightly.
Add cooled maple syrup mixture, cornstarch, mixed with 1/4 cup of cream and salt.
Mix well, then gradually add the rest of the cream.
Cook until thickened, stirring constantly.
Remove from heat and cool to room temperature.
Stir often or cover to prevent skin from forming.
Stir in bitters.
Fold in stiffly beaten egg whites.
Pour into individual serving dishes.
Chill. Serve plain or with whipped cream.
Serves 6 to 8.
