Manhattan Meatballs
Manhattan Meatballs is an moderately easy dinner. Made with 2 lb. ground beef, 2 c. soft bread crumbs, 1/2 c. chopped onion, 2 eggs and 2 tbsp. chopped parsley, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.
In large bowl, mix together meat, crumbs, onion, eggs, parsley and salt. Shape into 1 inch balls. Heat oven to 350Β°. In large skillet, brown meatballs in margarine; drain. Place in 13 x 9-inch baking dish. Stir together jelly and barbecue sauce; pour over meatballs. Bake 30 minutes, stirring occasionally. Makes approximately 6 dozen. Recipe may be made ahead. Cover; seal and freeze.
When ready, place in refrigerator 6 to 8 hours. Uncover; bake 1 hour, stirring occasionally.
