Luscious Lemon Cake
Luscious Lemon Cake is an moderately easy dinner. Made with 8 egg yolks, 3/4 c. butter or oleo, 1 1/4 c. sugar, 2 1/2 c. sifted cake flour and 1 tbsp. baking powder, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

Beat egg yolks at high speed with mixer for 4 minutes.
Set aside.
Beat butter at medium speed until creamy.
Gradually add sugar; beat well.
Add egg yolks.
Beat well.
Combine flour, baking powder and salt.
Add to butter mixture alternately with milk, beginning and ending with flour mixture.
Stir in lemon juice, rind and vanilla.
Spoon into 3 greased and floured 8-inch cake pans.
Bake at 375Β° for 18 to 20 minutes, or until tests done.
Cool in pan on wire rack for 10 minutes; remove from pan and cool completely.
Frost top, sides and between layers with Lemon Frosting.
