Lentil Soup
Lentil Soup is an moderately easy dinner. Made with 1 lb. dried lentils, 1 ham bone, 6 slices bacon, 2 carrots, sliced and 1 green pepper, diced, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.
Soak lentils overnight.
Drain and rinse.
Combine lentils, stock and ham bone in large pot.
Simmer 1 hour.
Fry bacon; drain and crumble.
Cook carrots, green pepper and onions in bacon fat until soft; add to soup with tomatoes, salt, pepper and vinegar. Simmer 2 hours.
Remove bone.
Top soup with crumbled bacon.
(I usually eat this before the soup is done!)
