Lentil Loaf
Lentil Loaf is an moderately easy dinner. Made with 1 tbsp. flour, 1/2 tsp. salt, 1 tbsp. margarine, 1 c. evaporated milk and 2 c. cooked, pureed lentils, this recipe delivers authentic, satisfying flavors. A classic recipe that has been enjoyed for generations.

Blend flour and salt with margarine in saucepan over low heat. Add milk and stir until mixture is thickened and smooth.
Add lentil purée, onion, sage, seasoning, bread crumbs and melted margarine.
Fold in egg yolk and then stiffly beaten egg white. Steam in double boiler or in round cans for 2 hours, or bake in casserole at 375° for 45 minutes.
Makes 6 servings.
