Lemon Pie
Lemon Pie is an moderately easy dinner. Made with 3 eggs (save whites for meringue), 1 c. sugar, 1/2 tsp. salt, 1/4 c. cold water and 1 1/4 c. hot water, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

Blend cold, then hot water into mixture of sugar, cornstarch and salt. Cook over low heat. Stir constantly until thick.
Slowly blend egg yolks. Return to heat and cook 2 minutes. Add lemon juice and rind.
Cook until desired thickness. Remove from heat. Add butter. Pour into cooked pie shell. Top with stiffly beaten meringue.
