Lemon Meringue Pie
Lemon Meringue Pie is an moderately easy dinner. Made with 1 1/2 c. sugar, 1/4 tsp. salt, 6 tbsp. cornstarch, 1/2 c. cold water and 1/2 c. fresh lemon juice, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

Sift the first 3 ingredients into a 2 or 3-quart saucepan, then gradually blend in the cold water and lemon juice.
When smooth, add egg yolks and butter, blending thoroughly.
Stirring constantly, gradually add boiling water.
Bring mixture to a full boil, stirring gently.
As it begins to thicken, reduce heat and allow to simmer 1 minute.
Remove from heat and stir in 1 teaspoon grated lemon peel.
Pour into baked pie shell and cover with meringue.
