Lemon Meringue Pie
Lemon Meringue Pie is an moderately easy dinner. Made with 1 pie crust, baked, 1/3 c. cornstarch, 3 egg yolks, slightly beaten, 1/4 c. lemon juice and 3 tbsp. butter or margarine, this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.

Mix sugar and cornstarch in a 2-quart saucepan.
Stir water in gradually.
Stir over medium heat, bringing mixture to boil.
Boil and stir 1 minute more.
Take off heat.
Stir about half of mixture into egg yolks, then return to saucepan.
Mix well. Return to a boil, stirring constantly.
Boil and stir 1 minute more and take off heat.
Stir in lemon juice, butter and rind. Pour into baked shell.
Turn oven to 400Β°.
