Lemon Meringue Pie
Lemon Meringue Pie is an moderately easy dinner. Made with 1 c. water, 3/4 c. sugar, 3 tbsp. flour, made into paste, 4 eggs, separated and juice and grated rind of 1 lemon, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.

Boil water and sugar together; add flour paste and cook 5 minutes.
Mix the yolks of eggs, lemon juice, rind and salt.
Add 1 tablespoon of hot sugar mixture to yolk mixture and stir.
Repeat 3 times.
Add this mixture to the remainder of the sugar mixture.
Fluff 1/2 of egg whites until stiff.
Add to sugar mixture.
Pour into previously baked crust.
Make a meringue of the remaining egg whites by beating whites until stiff.
Add 2 tablespoons sugar.
Cover pie with meringue.
Bake at 400Β° for 5 to 7 minutes.
