Mix salt and egg whites.
Beat until stiff.
Beat in 3/4 cup sugar, 1 tablespoon at a time.
Beat in lemon extract.
Drop meringue onto brown paper lined baking sheet.
Bake at 300° for 10 to 15 minutes until golden.
Reduce oven to 250°.
Bake for 30 to 40 minutes longer until dry and lightly browned.
