Key Lime Crispies
Key Lime Crispies is an moderately easy dinner. Made with 1 3/4 c. sugar, 1 c. butter or margarine, 2 eggs, 2/3 c. oil and 4 c. all-purpose flour, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.
Preheat oven to 375 degrees. Cream together the sugar and butter.
Add the eggs and oil and beat well. Combine flour, baking soda, and salt. Stir to mix. Add to the creamed mixture along with the Key lime juice.
Beat until smooth and well mixed. Roll the dough into small balls about 1 inch in diameter. Place on ungreased cookie sheet, spacing cookies about 2 inches apart. Using the bottom of a glass dipped into sugar, flatten the balls. Bake for 10 to 12 minutes or until lightly browned around the edges.
Remove from the pan immediately to a wire rack. Dust with confectioners' sugar.
