Kay's Ratatouille Rice
Kay'S Ratatouille Rice is an moderately easy dinner. Made with 1 lb. ground sirloin beef, 3 medium onions, thinly sliced, 2 cloves garlic, minced, 1 c. regular rice and 2 1/2 c. water, this recipe delivers authentic, satisfying flavors. Perfect for family dinners and special occasions.
Brown beef; drain.
Add sauteed onions and garlic; cook and stir until tender (2 minutes).
Add rice, water, 2 teaspoons salt, pepper and basil.
Bring to a boil.
Cover tightly; simmer over low heat until liquid is absorbed (25 minutes).
Add vegetables and 2 teaspoons salt (or to taste).
Cover and cook until zucchini is tender, 6 to 8 minutes.
Makes 4 to 6 servings.
