Italian Style Zucchini
Italian Style Zucchini is an moderately easy dinner. Made with 6 zucchini, 3 c. soft bread crumbs, 1 1/4 c. grated parmesan or cheddar cheese, 1 small onion, minced and 3 tbsp. minced parsley, this recipe delivers authentic, satisfying flavors. A classic recipe that has been enjoyed for generations.
Cut ends from zucchini, but do not peel.
Cook in boiling, salted water for 5 minutes.
Halve lengthwise.
Remove pulp with spoon.
Reserve shells.
Combine zucchini pulp with 1/2 cup of cheese and all other ingredients except margarine.
Mix well. Fill shells.
Dot with butter or margarine.
Sprinkle with cheese. Bake in a 350Β° oven for 30 minutes.
