Italian Style Catfish
Italian Style Catfish is an impressive dinner. Made with 2 tsp. vegetable oil, 2 green onions, sliced, 1 garlic clove, minced, 1/2 c. tomato juice and 1/4 c. white wine, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.
Heat 2 teaspoons of oil in medium saucepan; stir in onion and garlic.
Cook over medium heat until tender.
Stir in tomato juice, wine, Italian seasoning and crushed red peppers.
Simmer until reduced to a thick sauce, about 7 to 8 minutes, stirring occasionally.
Add diced tomatoes and parsley.
Rinse catfish.
Pat dry with paper towels.
Season with salt and pepper.
Coat with cornmeal.
