Italian Sausage Casserole is an moderately easy dinner. Made with 8 medium red potatoes, unpeeled and quartered, 3 c. celery, cut up, 2 medium onions, coarsely chopped, 1 large green pepper, coarsely chopped and 1 medium eggplant, peeled and cubed, this recipe delivers authentic, satisfying flavors. Brown sausage and cut into 1-inch pieces.
Set aside.
Place all vegetables and spices in a large bowl, mixing in olive oil gently.
Mix sausage and vegetables together and place in large glass baking dish.
Cover tightly with foil and bake at 400Β° for 1 1/2 hours.
Top with Parmesan cheese to serve.
