Italian Codfish
Italian Codfish is an moderately easy dinner. Made with 1 1/2 to 2 lb. codfish, 2 tbsp. olive oil, 2 small onions, chopped, 10 to 12 pitted olives, cut up and 1 stalk celery, cut up, this recipe delivers authentic, satisfying flavors. Packed with nutrients and delicious flavors.

Soak codfish overnight in cold water; changing water several times.
Saute onions, olives, celery and capers in olive oil. Stir occasionally.
Add crushed tomatoes, salt and pepper.
Simmer about 5 minutes.
Add codfish.
Add enough water to cover fish. Simmer 20 to 25 minutes.
