Irish Stew
Irish Stew is an moderately easy dinner. Made with 1 1/2 lb. lamb or mutton, cut in cubes, 3/4 c. sliced onion, 2 1/2 lb. sliced potatoes, salt and pepper and 1 bay leaf, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.
In the bottom of a heavy pan, layer the potatoes, meat and onion.
Begin with the potatoes.
Repeat this layering twice, ending with the potatoes on top.
Season with salt and pepper. Add the bay leaf; cover the mixture with water and parsley.
Bring to a boil; cover and simmer over low heat for about 2 1/2 hours. Shake the pot periodically so that the potatoes do not stick. When done, the moisture should be absorbed by the potatoes.
