Ilish Macher Dom
Ilish macher dom is a rich Bengali hilsa preparation, slow-cooked with onion, ginger, yogurt, warm spices, and potatoes until the gravy clings to the fish. It is deeper and more luxurious than a thin jhol but still best with plain rice.

Season hilsa with salt and turmeric and sear briefly in mustard oil; brown the potatoes too.
Cook onions until golden, then add ginger, chile powder, yogurt, and salt.
Add potatoes and a little water, simmering until the gravy thickens.
Nestle in the fish, cover, and cook gently until the hilsa is done; finish with garam masala.
