Hungarian Goulash Soup
Hungarian Goulash Soup is an moderately easy dinner. Made with 3 bacon strips, diced, 2 small green peppers, chopped, 2 medium onions, minced, 1 1/2 lb. cubed beef stew meat and 2 tsp. paprika, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.

In large kettle, cook bacon until almost crisp.
Add green pepper, onion and garlic.
Cook until tender.
Add beef cubes and brown on all sides.
Sprinkle with paprika, salt and pepper.
Stir and cook for 2 minutes.
Add tomatoes and broth.
Cover and simmer for about 1 1/2 hours or until beef is tender.
One half hour before serving, add potatoes.
Cook until tender.
Garnish each serving with a dollop of sour cream.
