Hot Relish(Canning!)
Hot Relish(Canning!) is an moderately easy dinner. Made with 1/2 gal. green tomatoes, cut in 6 or 8 pieces, 2 qt. coarsely chopped sweet peppers, 3/4 c. salt, 1 tsp. alum and 1/2 gal. vinegar, this recipe delivers authentic, satisfying flavors. A classic recipe that has been enjoyed for generations.

Combine tomatoes, sweet peppers, salt and alum.
Let stand 2 to 3 hours.
Drain well.
Combine vinegar and sugar.
Bring to a boil. Add all ingredients.
Heat just to simmering point.
Remove from heat and can.
Yields 9 pints.
