Hollandaise Sauce
Hollandaise Sauce is an easy dinner. Made with 3 egg yolks, 6 tbsp. butter, 2 tbsp. lemon juice, 1/4 c. boiling water and 1/2 tsp. salt, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.

In top of double boiler heat beaten egg yolks.
Gradually add butter, 1 tablespoon at a time, stirring constantly.
Cook over hot water, not boiling or it will curdle, until thickened. Gradually add water and lemon juice while stirring.
Add salt. Serve with fish.
Yields 1 cup.
