Healthy Yogurt Quiche
Healthy Yogurt Quiche is an moderately easy dinner. Made with 1 small onion or 2 to 3 tsp. dried onion, 2 to 4 oz. cheese or less (monterey jack, mozzarella or low-fat, low sodium variety), diced, dash of pepper, 1/8 tsp. nutmeg and 1/2 c. skim milk, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.
Preheat oven to 375Β°.
Cover bottom of 9-inch pie plate with sliced mushrooms.
Mix all ingredients together except nutmeg, beating well.
Pour into pie plate over mushrooms.
Sprinkle top of mixture with nutmeg.
Bake 35 minutes or until lightly browned. Let stand 10 minutes before serving.
