Hawaiian Sweet Potatoes
Hawaiian Sweet Potatoes is an moderately easy dinner. Made with 6 medium sweet potatoes, cooked and mashed, 2/3 c. drained, crushed pineapple, 1/4 c. orange juice, 1/3 c. half and half and 1/4 c. brown sugar, firmly packed, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.
Combine sweet potatoes, pineapple and orange juice; mix well. Combine half and half, brown sugar and butter; cook over low heat, stirring constantly until butter is melted.
Add to potato mixture along with salt and cinnamon; blend thoroughly.
Pour into a lightly greased shallow casserole; sprinkle with coconut.
Bake at 400Β° about 10 minutes or until coconut is lightly toasted. Makes 8 to 10 servings.
