Grapefruit Peel Candied
Bittersweet grapefruit peel simmered down and rolled in sugar into a chewy citrus candy. Bright, slightly resinous, and a thrifty way to use the whole fruit.

Peel the grapefruit; cut in strips.
Cook in the water and sugar.
Keep adding water as it cooks.
When it looks transparent, you have to keep stirring, then use sugar to roll pieces in until it will absorb no more.
Lay on wax paper, then put in container. Eat as pieces of candy.
