Granny's Candied Pickles
Granny'S Candied Pickles is an moderately easy dinner. Made with 2 gal. sliced cucumbers, 2 c. plain salt, 1/2 box alum, 1 c. vinegar and 1/2 box ginger, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.

Mix and cover cucumbers and salt with boiling water and leave for 3 days in a non-metal container.
Drain, wash and cover with boiling water again and leave for 24 hours.
Then wash several times.
Mix alum, vinegar and ginger and add to the cucumbers and simmer for 1 hour.
Wash and put cucumbers in a pan with sugar, 2 1/2 pints vinegar and pickling spices.
Boil 10 minutes and can.
