Golden Potato Squares
Golden Potato Squares is an moderately easy dinner. Made with 5 lb. potatoes, 1 1/2 c. onion, 2/3 c. melted butter, 4 eggs, beaten and 1 (13 oz.) can evaporated milk, this recipe delivers authentic, satisfying flavors. Perfect for family dinners and special occasions.
Pare potatoes and place immediately in cold water.
Saute onion in butter in skillet until tender.
Add evaporated milk; bring to a boil.
Remove from heat.
Combine eggs, salt and pepper in a large glass bowl; beat until frothy.
Shred potatoes using medium blade of shredder.
Place immediately into egg mixture, turning to coat well.
Add parsley, 1 cup of cheese and milk mixture; mix well. Turn into greased 13 x 9 x 2-inch baking dish.
Bake in a 350Β° oven for 1 hour.
Top with 1/2 cup of cheese.
Bake 30 more minutes or until done.
Cut in squares.
Makes 12 servings.
