Gloria's Italian Chicken
Gloria'S Italian Chicken is an moderately easy dinner. Made with about 6 pieces chicken (either boneless or bone-in as you wish; i use boneless breasts), salt, pepper, 1/2 to 1 c. parmesan cheese and olive oil, this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.
Wash, salt and pepper chicken pieces. Leave a little wet. Roll in shredded Parmesan cheese (or that from a can). Heat a small amount of olive oil. Chop a clove or 2 of garlic into the oil; then add the chicken and brown. When the chicken is well browned on both sides, add the wine*; cover and cook until done, about 20 minutes. When chicken is done, add the mushrooms and stir. You can also pour in 1/4 cup more wine at this point if you want more flavor. Serves about 6. Can freeze. Can do ahead.
