Ginger Shortbread Cookies

In medium bowl, whisk flour with ground ginger and salt.
In a large bowl, using an electric mixer, cream butter and sugar until light and fluffy.
Using a wooden spoon, gradually beat in the dry ingredients.
Stir in the crystallized ginger until well distributed.
Gather dough into ball.
Cut into quarters and pat into 4 individual balls.
Wrap each ball in wax paper and refrigerate 1 hour until firm.
Roll out on lightly floured board. Cut with cookie cutter.
Place on 2 ungreased cookie sheets one inch apart.
Bake at 325Β°.
After 6 minutes switch cookie sheets in oven.
Bake until golden.
Remove to wire rack.
