German Potato Salad
German Potato Salad is an moderately easy dinner. Made with 2 lb. red potatoes (about 6 medium), water, 9 strips bacon, fried and chopped, 1/2 c. chopped onion and 1 tbsp. all-purpose flour, this recipe delivers authentic, satisfying flavors. Simple to make and full of bold, satisfying flavors.

Boil potatoes in water to cover until tender, about 20 minutes.
Set potatoes aside until cool enough to handle, then peel and slice.
Put potatoes in a large bowl.
Saute bacon in a large skillet until browned and crisp.
Remove bacon from skillet and reserve.
Remove all but 8 tablespoons bacon grease from skillet.
Set skillet over medium-high heat; add onion and saute, stirring often, for about 3 minutes.
Stir in flour, sugar, salt and pepper.
Stir well.
Slowly stir in vinegar and 1/2 cup water. Cook, stirring constantly, until mixture thickens, 1 to 2 minutes.
