Fried Fish
Fried Fish is an easy dinner. Made with 2 lb. skinned fish fillets, 1 c. self-rising flour, 1 tsp. salt and 1/2 tsp. pepper, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.

Cut fish fillets into serving-size pieces.
Combine flour, salt and pepper.
Coat fish with flour mixture.
Place fish in a frying pan containing about 1/8-inch hot (but not smoking) oil.
Fry at moderate temperature for 4 to 5 minutes or until brown.
Turn carefully and fry additional 4 to 5 minutes or until fish is brown and flaky and no longer translucent in the center.
Drain on paper towels.
Yield: 6 servings.
