French Onion Soup
French Onion Soup is an moderately easy dinner. Made with 4 tbsp. butter (1/2 stick), 4 c. thinly sliced onions (2 to 3 onions), 2 c. sliced mushrooms, 1 1/2 tbsp. flour and 6 c. beef broth (not bouillon), this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.

In a 3-quart soup pot on the stove top, melt butter and add onions, stirring constantly.
Cook for 15 to 20 minutes or until soft.
When onions are soft, add mushrooms and cook 2 more minutes.
Sprinkle flour over and stir well.
Add 2 cups of beef broth.
Continue stirring until the mixture is thickened.
Add remaining broth and stir in salt, pepper and brandy.
Bring to a boil.
Cover and simmer for 45 minutes.
Add Kitchen Bouquet and stir well.
Taste for seasoning and correct if necessary.
Makes 6 (1 1/3 cup) servings; 3 carbs, 145 calories (per serving).
