Heat water and butter to rolling boil in 1 qt. saucepan.

Stir in flour. Stir vigorously over low heat until mixture forms a ball, about 1 minute; remove from heat. Add eggs; beat until smooth. Drop dough by scant 1/4 cupfuls onto ungreased baking sheet. Freeze uncovered until solid, about 4 hours. Place frozen puffs in freezer bag. Seal and label; freeze up to 1 month. 10 puffs.

1 1/4 hours before serving, heat oven to 400Β°. Place desired number of puffs 3 inches apart on ungreased sheet.

Bake until puffed & golden, 45-50 minutes. Fill puffs with sweetened whipped cream, fruit pie filling, or ice cream.

Sprinkle with powdered sugar.
