Frances' Hash
Frances' Hash is an moderately easy dinner. Made with 3 boston butts (medium), 2 chickens, 5 large cans tomato purée, 2 1/2 lb. potatoes and 1 1/2 lb. onions, this recipe delivers authentic, satisfying flavors. A classic recipe that has been enjoyed for generations.
Boil pork until done.
In separate pot, boil chicken.
Pour off broth.
When cold, take off fat.
Dice onions and boil them in chicken broth.
Cut up potatoes real small and cook them in onion broth.
Put pork and chicken through a grinder.
Mix meat with chicken, onion and potato broth.
Add tomato purée.
Add pork broth as needed.
Cook for a couple of hours.
Keep adding broth as needed.
Stir real often to prevent sticking.
Season to taste.
