End-Of-The-Month Casserole is an moderately easy dinner. Made with 8 oz. lean ground beef, 1 onion, chopped, 2 cloves garlic, minced, 1 small head cabbage, shredded and 2 carrots, peeled and sliced thin, this recipe delivers authentic, satisfying flavors. Brown ground beef in a skillet with onion and garlic.
Drain well.
Combine with cabbage, carrots, rice, soup, water, pepper and cumin in a 3-quart casserole dish.

Or cover dish with plastic wrap and cook on High (100%) power in microwave oven for 15 to 20 minutes, stopping twice to stir.
