Eggplant Pizzas
Eggplant Pizzas is an moderately easy dinner. Made with 1 1/2 lb. eggplant, 2 eggs, beaten, 2 c. bread crumbs, cooking spray and 1 small green pepper, minced, this recipe delivers authentic, satisfying flavors. Perfect for family dinners and special occasions.

Wash eggplant.
Cut off ends.
Leave skin and cut in 1/3-inch slices.
Dip in egg, then bread crumbs.
Place on baking sheet sprayed with cooking oil.
Broil until crumbs are brown, about 1 minute per side.
Saute pepper and mushrooms in vegetable oil.
Set aside.
Place spoonful of sauce and a pinch of oregano on each. Add peppers and mushrooms.
Top with cheese.
Broil until cheese melts, 1 minute.
