Eggplant Parmesan
Eggplant Parmesan is an moderately easy dinner. Made with 1 eggplant, 1 egg, plus 2 tbsp. milk, 1/4 c. wheat germ, 1/2 c. bread crumbs and 1 tbsp. parmesan cheese, grated, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.
Combine wheat germ, bread crumbs and Parmesan cheese.
Mix egg and milk.
Peel eggplant and slice into 1/2-inch slices.
Dip eggplant slices in egg mixture, then in bread crumb mixture. Place in a single layer on oiled baking sheet.
Bake at 350° for 15 minutes.
Turn and bake 10 more minutes.
Layer eggplant in casserole; top with sauce, then cheese.
Repeat layers.
Bake at 350° for 25 minutes, covered.
Bake for 15 minutes, uncovered.
