Eggplant Parmesan
Eggplant Parmesan is an easy dinner. Made with 1 lb. ground beef, 1 or 2 medium eggplants, cut in 1/2-inch pieces, 1 lb. grated mozzarella cheese and 1 lb. jar spaghetti sauce (prego or ragu), this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

Brown ground beef and drain.
Mix sauces and beef.
Cook eggplant until tender.
Drain well.
In a 2 1/2 or 3-quart casserole dish, layer beef, eggplant and cheese until the last layer is cheese.
