Eggplant Parmesan
Eggplant Parmesan is an moderately easy dinner. Made with 1 large eggplant, 1 c. bread crumbs, 1/2 c. grated parmesan cheese, 2 tsp. oregano and 1/2 lb. mozzarella cheese, this recipe delivers authentic, satisfying flavors. Packed with nutrients and delicious flavors.

Start oven at 350Β°.
Wash eggplant and peel.
Cut into thick slices; dip in beaten eggs, then into bread crumbs.
Saute in hot oil until golden brown on both sides.
Place in 2-quart casserole 1 layer of eggplant then sprinkle a layer of Parmesan, oregano and Mozzarella.
Cover with tomato paste.
Repeat until all eggplant is used.
Last layer tomato paste and Mozzarella cheese.
Bake uncovered 30 minutes or until cheese is bubbly.
