Eggplant Casserole
Eggplant Casserole is an moderately easy dinner. Made with 1 medium eggplant, 1 c. cold cubed chicken or other meat, 2 tbsp. margarine, dash of pepper and 8 to 10 crackers, crumbled, this recipe delivers authentic, satisfying flavors. A classic recipe that has been enjoyed for generations.

Peel and slice eggplant 1/2 inch thick.
Parboil with salt until tender.
Alternate in a baking dish, a layer of eggplant, chicken and cracker crumbs.
Repeat until used.
Pour milk over all and top with crumbs and pepper.
Bake 30 minutes in a 350Β° oven. Put shredded cheese on top the last 10 minutes.
